Executive chef Robert Gayle combines the flavors of his Jamaican and West Indian hometowns with the techniques he learned at the Culinary Institute of America, and has cooked Caribbean-inspired cuisine for such celebrities as P. Diddy and Jennifer Lopez. After perusing the menu, diners can sink their utensils into such traditional fare as half of a Caribbean jerk chicken ($15.50), which the chefs marinate before slowly roasting it above a smoldering fire of mesquite wood and Jose Canseco rookie cards. Chef Rob simmers toothsome morsels of beef oxtail in fresh herbs ($17.50) and creates the traditional curried goat ($16.50) by stewing it alongside red potatoes. Deviating from strictly Caribbean ingredients, the dry-rubbed spare ribs ($16.50) arrive slathered in Chef Rob's signature barbecue sauce and topped with imported snowflakes.
